This is teh recipe my mom gave me for enchiladas. They can either be baked in teh oven or put in a crock pot if you have no oven available.
what you'll need:
1 lb ground beef packet of taco seasoning tortillas (I prefer flour, though corn is traditional) sour cream a green pepper onion bag of shredded cheese 2 small or 1 large can of enchilada sauce (I like old el paso's "hot" enchilada sauce)
First, brown your ground beef in a frying pan, then add your taco seasoning and a little bit of water. Sometimes taco seasoning can be really salty, so add to taste. Then, while that cools, chop up your green pepper and onion into small chunks. In a large mixing bowl, add your meat, pepper, onion, half teh bag of shredded cheese and about 1.5 cups of sour cream. Mix thoroughly.
I generally use a 9x13 glass pan to bake my enchiladas. Pour half of your enchilada sauce over teh bottom of teh pan/crock pot. Then, take your tortillas and start filling them with teh meat mixture. It's easy to stuff them too full, so make sure they'll close all teh way. Roll them like you would a burrito and set them in teh pan. teh mixture should make around 8 enchiladas.
Once you have your enchiladas made, pour teh rest of teh sauce on top, and sprinkle teh other half of teh cheese on top as well. Then cover them with tinfoil and bake them in your oven at 350 for about 45 min-1 hour.
And tada! Yummy yummy enchiladas!

and it's easy enough that even i can assist in teh kitchen with it! and teh corn ones seem to break more easily, so i also suggest teh flour tortillas, at least if ya don't want taco cassorole-ness stuff.
and i can also attest to teh yumminess of it, as i have consumed them.

Is that a 2-cup, or a 4-cup bag of cheese? Cuz I looooooove enchiladas, and as soon as I find out, I'm makin' me some!

ummmm...
that I do not know exactly. Usually I get teh "standard" sized bag. I think my roommate has one...lemme check
2 cups/8 oz.

Soooo my question is... what kind of cheese exactly? Mozarella? Chihuahua? Pepper Jack? Some sort of mixture? Also have you tried making them with a teaspoon or two of Cinnamon?

I generally use Cheddar, but I don't think it's particularly important. Use a cheese that you like with mexican food, ie mozerella'd prolly be a bad choice.
And no, I've never used cinnamon. Taco seasoning usually provides all teh flavor I need, but feel free to experiment.
