okies, this is a variation of pasta primavera with shrimp and a nice cheesy sauce. i don't usually use cookbooks or record how much of anything i put in, i just cook, hehe. so these are estimates.
ingredients:
one of each: red, yellow, orange and green pepper, chopped
one small onion, minced
one or two cloves of garlic, minced
butter
milk or cream [doesn't really matter, use milk if you wanna cut teh fat content]
one 8 oz. pkg of cream cheese, cut into cubes
parmesan cheese
one large tomato diced
fresh basil
fresh oregano
fresh parsley
salt and pepper
olive oil
garlic powder
your favorite pasta
about 1/2 pound of shrimp, more or less depending on how much shrimp you want in it
melt butter in a large pan
add onions, as soon as onions turn translucent then add garlic, do not let it get too brown! just cook it long enough to start smelling it.
add peppers and tomato
stir teh veggies around to prevent them from browning
add teh cream cheese cubes and some milk. depending on how thin you want teh sauce depends on how much milk you should add.
stir until cream cheese melts
add salt and pepper and parmesan cheese, reduce heat to low and cover.
while you are preparing teh sauce, you should be boiling teh water for your pasta. make your pasta fools! this should be self explanitory.
add your shrimp to teh veggie/cheese mixture right before your pasta is ready. you wanna only cook teh shrimp a short time, if you cook 'em too long they will get too firm and icky. you wanna cook them just until they begin to curl up and turn whitish.
when your pasta is done, toss it with a bit of olive oil and sprinkle some garlic powder on it [if you want]. top it with your sauce and tada! yummy shrimp primavera. it really is good. everyone who has it raves about it.
