ok, here's teh recipe for my ultra-decadent cheesecake. this recipe is mine, i didn't get it from a cookbook or anything. it's full of fat and calories so you calorie watchers [ha!] might not wanna try this one, but you'll wish you had. it's sooooooo good!
ingredients:
crust:
1 stick of butter
1 pkg. graham cracker crumbs
filling:
5 8 oz. packages of cream cheese
1 3/4 cups sugar
1/4 teaspoon vanilla
1/4 teaspoon orange rind
3 tablespoons flour(unbleached)
1/2 teaspoon lemon rind
5 eggs plus 2 egg yolks
1/4 cup heavy cream
procedure:
crust:
melt butter and add to graham cracker crumbs. mix until moist. spread into bottom of teh springform pan. bake at 350 degrees for about ten minutes.
cake:
preheat oven to 450 degrees.
combine creamcheese, sugar, vanilla, orange rind, flour and lemon rind, beat until smooth. add eggs and egg yolks one at a time, beating slowly. blend in heavy cream. pour into pan.
bake for 12 minutes at 450 degrees, reduce temperature to 250 degrees and bake for one hour. ( baking times may vay due to differences in your oven, adjust time and temperature according to your oven. ) let cool to room temperature and top with what you like.
this is a base cheesecake recipe sooooo you can add your own flavorings and change teh crust from graham crackers to cookie crumbs. you can pretty much do what you want with it. however, if you use something like fruit preserves to flavor your cake, your baking time will be longer than one hour and extend teh time at 450 degrees from 12 minutes to 18 minutes. refrigerate overnight.
